Quick Pressure Cooked Vegetables | Family Food Tales with Mrs Alyona Kapoor | Sanjeev Kapoor Khazana



The easiest and least fussy recipe to make when youre tired or lazy, the method of cooking in a pressure cooker is a boon for anyone who wants to whip up a tasty recipe in a jiffy!

QUICK PRESSURE COOKED VEGETABLES

Ingredients

2 medium carrots, peeled
2 medium potatoes, peeled, cut into ½ inch pieces and soaked
¾ cup green peas
2 teaspoons ghee
1 teaspoon cumin seeds (jeera)
½ teaspoon crushed black peppercorns
½ teaspoon chaat masala
Salt to taste
½ teaspoon garam masala powder
Chopped fresh coriander leaves for garnishing
White bread toasts for serving
Tomato ketchup for serving

Method

1. Vertically halve carrots and cut into ½ inch pieces.
2. Heat ghee in a pressure cooker. Add cumin seeds and when it changes colour, add crushed peppercorns, chaat masala, drained potato pieces, salt and carrot pieces and mix well.
3. Add green peas and mix. Add garam masala powder, mix, cover and cook till one whistle is released. Switch off heat and set aside for 5-10 minutes.
4. Garnish with coriander leaves and serve hot with bread toasts and tomato ketchup.
