Anzac Day, 25 April, is one of Australia’s most important national occasions. It marks the anniversary of the first major military action fought by Australian and New Zealand forces during the First World War.
The popular Anzac biscuit is a traditional, eggless sweet biscuit. Ingredients include rolled oats, sugar, plain flour, coconut, butter, golden syrup or treacle, bi-carbonate of soda and boiling water. Though there are many, many variations that help to make these biscuits crunchy, or chewy, or the perfect mix in-between.
We love making Anzac biscuits, but we also love to gift them. Baked, and in jars with the dry ingredients. Gifting a jar full of biscuit or cookie ingredients is always a good idea. Especially when they are Anzac biscuits and look so pretty. At a time when we need to come together and share community spirit, this little gift idea may be just the thing to leave on a neighbours door step.
ANZAC biscuit in a jar: Layer the flour, oats, coconut, brown sugar, white sugar and salt in a jar. Press each layer of the ingredients down flat before adding the next. We used a 700ml capacity jar. You can then add a nice handwritten recipe and tie to the jar to complete the gift.

Ingredients
- 100g butter (see note)
- 2 tbs golden syrup
- 1 tbs water
- ½ tsp baking soda
- 110g (3/4 cup) plain flour
- 90g (1 cup) rolled oats
- 40 g (1/2 cup) desiccated coconut
- 110g (1/2 cup) brown sugar
- 55g (1/4 cup) white sugar
- 1/4 tsp salt
Method
Step 1
Preheat oven to 160ºC (140 ºC fan forced). Line two baking trays with non-stick baking paper. –
Step 2
Combine flour, oats, coconut, sugars and salt (all of the jar ingredients) in a large bowl. Mix to fully incorporate. –
Step 3
Melt the butter in a medium saucepan. Add the golden syrup and water. –
Step 4
Once the butter and honey mixture are combined, stir in the bicarbonate of soda. This will foam up. –
Step 5
Pour the wet mixture over the dry ingredients and stir until well combined.

Roll tablespoons of mixture into balls and place your lined baking trays leaving space between each. –
Step 7
Bake biscuits in the oven for 12 – 15 minutes, or until golden brown. Check after 10 minutes and switch trays for more even baking. –
Step 8
Note: for an extra depth of flavour to your biscuits, you might like to brown your butter. For this, you will need to use 130g of butter, to account for volume loss when cooking it down. Place the butter in a medium saucepan over a medium heat. Stir the butter as it is melting. Continue cooking until the butter foams and turns golden brown and nutty. Weigh out 100g. Return to the pan and add the golden syrup and water. –
