These cute rainbow fruit salad jars are fun for kids to make and a great way to add a healthy rainbow of fruit to your day!
This week I’ll be sharing some new rainbow recipes here on the blog, starting with these beautiful and healthy rainbow fruit salad jars. Please forgive the (possibly excessive) number of photos, I really enjoyed snapping these colourful treats!
The rainbow has become a real symbol of hope during these difficult times and I thought some new rainbow food ideas would be a lovely way to continue the theme with the kids.
In case it’s difficult for you to find the specific range of rainbow fruits that I used in my recipe below, I’ve provided a long list of alternative rainbow fruit ideas below the main recipe to help you adapt this idea to suit your tastes and resources.
These rainbow fruit salads are a great way to encourage kids to eat more fruit, and (in better times!), it will be a fun project to take them to the shops to choose their own rainbow of fruit to build their fruit salads from.
For now, why not get them to write or draw a shopping list for you with their ideal rainbow of fruit?
I used natural yogurt sweetened with a little honey for the ‘clouds’ at the bottom of our rainbows, but you can easily swap it out for Greek yogurt, plain goats yogurt or a dairy free plain yogurt alternative such as soya or coconut if wanted.
We presented our fruit salads in old jam jars (wash and dry them first!) for a full visual of the fruit rainbows but you can use clear plastic or glass tumblers or small glass bowls to get a similar effect.
Ingredients (makes 4):
Equipment:
Method:
Mix the yogurt with the honey, then divide between the 4 jars, carefully spooning into the bottom of each jar and avoiding dripping it down the sides if possible.
Prepare the fruit – wash and halve the green grapes, peel and roughly chop the kiwi fruits, roughly chop 4 apricot halves (reserve the syrup), peel and break the oranges into segments, wash, hull and roughly chop the strawberries, wash the blueberries.
Carefully divide the fruit between the 4 jars, layering in rainbow order – the order I used was kiwi, green grapes, apricot, orange segments, strawberries and blueberries.
Drizzle a spoonful of the reserved syrup from the tinned apricots over the fruit in each jar and serve immediately.
Enjoy!
You may not be able to get hold of the exact fruit that we used for this recipe, so please see the ideas below for a whole rainbow of different coloured fruit ideas:
Green / White
Yellow
Orange
Red/Pink
Blue / Black
Do you have any other fruit ideas to add to our fruit rainbow? Please comment below if you do and I’ll add them to the list!
