Here’s a Raw vegan minestrone soup! Savory, sweet, and satisfying! You’re new healthy comfort food!
FULLYRAW MINESTRONE SOUP!
Your giant bowl of ingredients includes:
â¤10-15 beef-steak tomatoes Strained Tomato Juice
â¤1 Bell pepper juiced
â¤1 cup of diced Carrots
â¤1-2 Diced or Spiralized Zucchini
â¤1 cup of Baby spinach
â¤1 cup sliced Cherry tomatoes
â¤1 cup of chopped celery
â¤Â½ cup of Parsley
â¤Â½ cup of Cilantro
â¤Â½ cup of chopped Mushrooms
â¤Â¼ cup of diced Leeks
â¤Â¼ cup of diced Green Onion
â¤A few sprigs of Thyme Dried or Fresh
â¤4-5 Sage Leaves
â¤A pinch of Cayenne pepper for those who want a kick
Base:
Juice the beef-steak tomatoes, the Red bell pepper, and a few stalks of celery. Strain several times until you are left with a tomato broth as a base.
Soup Creation:
Pour your base into your beautiful minestrone soup bowl, and sprinkle in your ingredients! Voila! You have minestrone soup! If you want your soup to be more flavorful, simply allow your soup to sit for approximately 30 minutes to an hour to allow the broth to absorb the flavors.
